
Asian Style Satay Peanut Sauce

This is a quick and easy recipe using Peanut butter from Jif which is found in our American food section of the Foodhall. It can be made with smooth or crunchy peanut butter and is a great accompaniment to chicken skewers, or can be used with stir fries.
PREPARATION TIME: 5 MINUTES
COOKING TIME: 15 MINUTES
OVERALL COOKING TIME: 20 MINUTES
INGREDIENTS
1 can coconut milk
2 tablespoons peanut butter
1 teaspoon sweet soy sauce
1 tablespoon brown sugar
1 teaspoon dried chilli flakes
1 small red chilli (finely chopped)
1 small onion (finely chopped)
1 clove garlic (crushed)
½ tablespoon peanut oil
METHOD
Step 1: Heat peanut oil in a wok and fry the garlic, onion and chilli until the onion is soft.
Step 2: Add the sugar and stir until slightly caramelised. Add the soy sauce and peanut butter and stir.
Step 3: Add the coconut milk a little at a time until you achieve the right consistency. Add less for a thicker dipping
sauce or more if you are using in a stir-fry.
