
Black Haggis & Apple Roll

INGREDIENTS
500g Black Haggis
2 Red Apples
1 Tsp Cinnamon
1 Tsp Park Brown Sugar
1 Tsp Thyme
Puff Pastry
2 Egg Yolks
Pinch of Black Pepper
Pinch of Salt
Pinch of Blue Poppy Seeds
METHOD
Step 1: Dice apples and sauté in a pan
Step 2: Add cinnamon, thyme and brown sugar and mix with black haggis
Step 3: Once the haggis has been mixed, shape mixture into sausage shapes and wrap with Puff Pastry
Step 4: Glaze Puff Pastry rolls with egg yolks
Step 5: Season with salt, pepper and poppy seeds and place in preheated oven at 160°C
Step 6: Bake for 30 minutes
